Sausage and Rice Surprise with the Instant Pot Mini Duo

This little machine has been a constant in my kitchen for nearly two years, and it’s perfect for feeding 2-4 people with normal portions. Today, I’m sharing a recipe that’s a favorite in my household: Sausage and Rice Surprise. This recipe is incredibly versatile, budget-friendly, and easy to make. So, let's dive in!

Ingredients:

  • 1 onion, finely chopped
  • 2 tablespoons of vegetable oil
  • 4 frozen sausages (or your choice of protein like chicken or bacon)
  • 1 teaspoon garlic granules (or 1-2 cloves of fresh garlic)
  • 1/2 tablespoon smoked paprika
  • 1/2 teaspoon turmeric
  • 150g mixed frozen vegetables
  • 1 chicken or vegetable stock cube
  • 250ml water
  • 130g basmati rice
  • Salt and pepper to taste

Instructions:

  1. Prep Your Ingredients:

    • Chop the onion finely.
    • Slightly thaw the frozen sausages for 5-10 minutes and cut them into pieces.
  2. Saute the Base:

    • Set your Instant Pot Mini Duo to the sauté function.
    • Add the vegetable oil and onion. Sauté until the onion starts to brown.
    • Add the sausage pieces and cook until they start to brown.
  3. Add Seasonings:

    • Mix in the garlic granules or fresh garlic.
    • Add the smoked paprika and turmeric. Stir to combine.
  4. Incorporate Vegetables:

    • Add the frozen mixed vegetables. They will release some moisture, helping to deglaze the pot.
    • Ensure nothing is sticking to the bottom of the pot to avoid a burn notice.
  5. Add Rice and Stock:

    • Add the basmati rice (washed, if preferred) and stir to combine.
    • Pour in the 250ml of water and add the stock cube. Stir well.
  6. Cook Under Pressure:

    • Cancel the sauté function and secure the lid. Set the Instant Pot to pressure cook on high for 4 minutes.
    • Once done, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  7. Serve:

    • Carefully open the lid and stir the mixture to ensure everything is well combined.
    • Dish up and enjoy your delicious Sausage and Rice Surprise!

  • This recipe is highly adaptable. Swap sausages for chicken, bacon, or make it vegetarian.
